Easy peasy pork one pot!

You all know I'm a fan of a mid-week one pot! So easy to make and healthy too. Here's one I made earlier .............

Recipe serves 2:

200g pork fillet diced
1 onion cut into wedges
1 eating apple cut into wedges
100ml dry cider
100ml chicken stock
2tbsp low fat crème fraiche
1\2 tsp dried sage
2tsp cornflour mixed with a splash of cold water

Method:
1. Fry the pork in some vegetable oil until the meat is browned.
2. Remove the meat and keep warm.
3. Fry the apple in the same frying pan with a small amount of butter. Brown and then remove from the pan.
4. Fry the onion until brown. Then add in the stock and cider. Cook for a few minutes then add in the cornflour. Stir and the sauce will nicely thicken.
5. Add in the crème fraiche and sage and stir.
6. Add the pork back in and simmer for about 10 mins until the meat feels tender. Add the apple back in just before you serve.

I served with a side of vegetables.
