Its National Breakfast week so I thought I would share with you a really versatile recipe that is naturally gluten free, great for kids and boosts up the fruit intake.
These are really easy to make and only requires 3 ingredients:-
Ingredients:-
2 eggs
2 bananas
Drop of vanilla
Method:-
- Crack 2 eggs and beat, add the vanilla essence
- Mash the banana separately and add to the egg
- Mix together (doesn't matter if there are banana lumps)
- Heat the pan on low heat - wait until hot.
- drop a small amount of mixture into the pan. The smaller they are the better they are to flip over.
- Cook for a few minutes on both sides until golden brown. Don't try to flip until the base is cooked otherwise they will fall apart.
- Serve with berries or maple syrup
