Banana Omelettes........ Yes its National Breakfast Week!!!

Its National Breakfast week so I thought I would share with you a really versatile recipe that is naturally gluten free, great for kids and boosts up the fruit intake. 

These are really easy to make and only requires 3 ingredients:- 

Ingredients:- 

2 eggs
2 bananas
Drop of vanilla

Method:- 

- Crack 2 eggs and beat, add the vanilla essence
- Mash the banana separately and add to the egg
- Mix together (doesn't matter if there are banana lumps)
- Heat the pan on low heat - wait until hot.
- drop a small amount of mixture into the pan. The smaller they are the better they are   to flip over. 
- Cook for a few minutes on both sides until golden brown. Don't try to flip until the base is cooked otherwise they will fall apart.
- Serve with berries or maple syrup

Chinese theme night - The Menu

I'm in the Gastronamis kitchen at the moment getting ready for our theme night! Thought I'd share the menu now then recipes and photos will follow. Louise is on starter and dessert, I'm on mains which I love doing, however I'm doing 3 this evening so the pressures on!

Starter:

  • Open spring rolls with sweet chilli dip

Mains:

  • Chicken noodle stir fry
  • Sweet & sour pork (the lighter way) served with long grain rice
  • Sichuan prawns with rice

Dessert:

  • Milk jellies with roasted, marinated pineapple slices

All healthy I must add!

And for the little ones, afternoon tea for two!

One Pot Chicken Fajita

I'm back at work and determined to still cook tasty fun food....... 

I've experimented tonight on a twist of Chicken Fajita. I've definitely added this to my mid week list of meals. 

Its so easy. 5 mins to prep. 4 hours in the slow cooker. Job done! 

Ingredients:- 

2 Chicken breasts ( I use organic)
1 onion - sliced
1 yellow pepper sliced
1 red pepper sliced
1 tin of chopped tomatoes
1 packet of fajita dry seasoning mix ( I used medium Discovery make)
half a cup of water
1 pack of wholemeal tortilla wraps

Method

- Add the sliced onions to the slow cooker pot
- Add the sliced red and yellow peppers
- Add the diced or sliced raw chicken
- Sprinkle the seasoning mix over the chicken 
- Pour the chopped tomatoes on top
- Add the water
- Pop the lid on
- Turn on high and cook for 4 hours
- Serve with rice

To make Tortilla chips:- 

Cut the wraps into triangles (like a pizza)
Lay on a baking tray and bake for 8-10 mins at 200C

Chinese New Year...........the healthy way!



The Gastronamis kitchen are having a theme night on Saturday! We're having a Chinese banquet to celebrate Chinese New Year, which is coming up in a few weeks time. We're doing it the "healthy" way to make sure we don't ruin all the hard work we've put into the post Christmas diet so far!

'Gastroothie Smoothie'

Its January........ and as most people are..... I'm on a health kick.

So life is good. Ive finished treatment and started back at work. Managed to squeeze a week in Lanzarote. I've never done 'winter sun' before but I'd definitely recommend it and what a great start to the year. Batteries are charged! 

I'm feeling positive and so its a new year with new goals and targets....... 

1. To be cancer free!! 
2. To get life back to 'normal' whatever normal is. 
3. Find some 'me' time every week. 
4. Continue with Yoga
5. Start swimming
6. Kick start a more healthy lifestyle

oh and grow Gastronamis........... 

Laura and I have some fab themed nights coming up which of course we will blog about and share the recipes. 

I'm on a bit of a 'veggie' / 'healthy eating' phase at the moment but the most important part is for the food to taste good (if my other half is going to eat it). I shared with you my absolute favourite veggie recipe 'Harissa Bake' and since then I have been experimenting and have a few more recipes to share. 

I've invested in a 'Nutribullet' (smoothie maker to those that haven't heard of them). I love it. It even grinds nuts and pulses which is a great way of adding key nutrients to your diet.

Anyone who says they don't have time to make a smoothie is lying! 

Ive started the day for the last 2 weeks with a freshly made smoothie, it literally takes 5 mins to make including prep. While my daughter is having her cereals in the morning, I can have a smoothie made and drunk. If you are really organised you can make the night before and save in the fridge for the morning. Its a great way to get a nutrient boost and easy to get a head start on your five a day. I started with a very simple recipe:- 

Banana, Strawberry and Blueberry

- 1 Banana chopped up
- Handfull of strawberries
- Handfull of Blueberries
- half a cup of water (I've also tried with semi skimmed milk and natural yoghurt which tastes amazing and helps add calcium into the diet)

Tomorrow I have made:- 

Pineapple, Raspberry and Banana

- Half a pineapple (to save time I bought the ready prepared pineapple - I know... I'm cheating)
- Handful of fresh raspberries
- 1 Banana
- half a cup of water

I'll post again when I've experimented with a few more recipes. 

The good news is I've lost 3lb this week! may the 'Gastroothie Smoothies' continue............

Saturday night treat!

It's January and like most we've been 'dieting' all week! It's Saturday night so thought we deserved a healthish treat! Burger with sweet potato wedges!

Easy peasy pork one pot!

You all know I'm a fan of a mid-week one pot! So easy to make and healthy too. Here's one I made earlier .............

Recipe serves 2:

200g pork fillet diced
1 onion cut into wedges
1 eating apple cut into wedges
100ml dry cider
100ml chicken stock
2tbsp low fat crème fraiche
1\2 tsp dried sage
2tsp cornflour mixed with a splash of cold water

Method:
1. Fry the pork in some vegetable oil until the meat is browned.
2. Remove the meat and keep warm.
3. Fry the apple in the same frying pan with a small amount of butter. Brown and then remove from the pan.
4. Fry the onion until brown. Then add in the stock and cider. Cook for a few minutes then add in the cornflour. Stir and the sauce will nicely thicken.
5. Add in the crème fraiche and sage and stir.
6. Add the pork back in and simmer for about 10 mins until the meat feels tender. Add the apple back in just before you serve.

I served with a side of vegetables.
